Recipe: My Nod to Bananas Foster

True Bananas Foster are a sight to behold: flambéed, sugared, spiced syruppy bananas served over ice cream. If you are inclined to go the traditional route, go for it!

Going bananas

Going bananas

My version is a little simpler, and doesn’t use any alcohol, which may appeal to some and dismay others. I’ve also cut some calories by serving this straight up instead of over ice cream… again, the appeal/dismay scenario. Oh, and instead of cinnamon being the only spice, my version also includes ginger and turmeric (thanks to the use of my “As Sweet as Kate” spiced sugar), making the healthfullness quotient shoot up.

Here goes:

Ingredients per person:

1 banana, cut lengthwise then in half
1 T butter
1 tsp As Sweet As Kate spiced sugar from Your Spice of Life
additional ASAK to sprinkle over dish when complete

Method:

Melt the butter and As Sweet As Kate spiced sugar in a sautee pan over medium heat, until the sugar dissolves into the butter.

Add the sliced bananas to the pan, gently heating them in the butter/sugar mixture until they lose their firmness (but before they start to lose their shape and get mushy).

Remove them to the serving dish(es), and sprinkle lightly with additional As Sweet As Kate for texture. Serve immediately.

Note:  if you are a fan of the sweet/salty thing,  try a tiny pinch of your favorite sea salt over the top of this… maybe the red Hawaiian. Along the same lines,  go for the sweet/savory combo and twist a small grind of my earthy Indonesian Long Pepper over the top!
