Recipe: Spiced Honey Roasted Carrots

“Yummy.  Easy.  Organic.™”  is my slogan… so I love it when I can bring together all three elements in one dish!

These carrots qualify. The yumminess comes from the inherent goodness of oven-roasted carrots, but the addition of my peppery Sweet Asian blend and a dash of honey bring them to a new level. Easy? You bet. Organic? All of my products are organic, and if you get a chance to visit your local farmer’s market or coop, you can get in on the action, too.

Ingredients:

2 lbs carrots, washed, peeled and sliced into large matchstick shapes (chop the carrot in half, then cut it lengthwise into 8 pieces)
Olive oil
2 tsps Sweet Asian spice blend by Your Spice of Life

Sweet Asian blend ~ peppery and warming

2 tsps honey
Sea salt to taste

Method:

Preheat oven to 375 degrees

Spread out the carrots on a large baking sheet that has edges.

Sprinkle the Sweet Asian over them, and drizzle about 2 T of olive oil. Toss well to coat the carrots.

Bake until tender and beginning to brown, about 25 minutes (check them often)

Remove from oven. Drizzle the honey over the carrots and toss well to coat. Taste for seasoning, and add some sea salt to your taste.

Note on the honey:

It has been all over the news for a while now:  counterfeit honey.
