Recipe: Dilly Cucumber Salad
Summer is full of picnics, BBQ’s and outdoors celebrations, with traditional foods like burgers, hotdogs and potato salad. Haven’t you ever craved something a little different?
Fresh, cool dill cucumber salad is the perfect answer. It’s quick and easy to make, refreshing, and holds up well because there is no mayonnaise to worry about.
The star ingredient that gives this salad so much flavor is Sarah’s Home on The Ranch Dip Mix. Yes, dip mix!
4 large cucumbers, washed, unpeeled, thinly sliced
2 cloves garlic, thinly sliced
1 large white onion (Vidalia or Walla Walla), thinly sliced into long strips
2 T rice wine vinegar or white cider vinegar
1/4 c olive oil
1 T Sarah’s Home on the Ranch by Your Spice of Life
1/2 tsp sea salt
Place cucumbers, garlic and onion into large bowl.
In a small bowl, whisk together the vinegar, olive oil, Sarah’s Home on the Ranch and sea salt.
Pour over cucumber mixture and stir well.
Taste and add more sea salt if needed.
The salad can be served immediately or left to marinate in the refrigerator for several hours.
